Only Coffee Project started in Sydney, where its Crows Nest café ranked fourth on the World's 100 Best Coffee Shops list in 2026 and was named best in Oceania. The brand is known for a purist espresso bar and a rotating choice of beans from roasters such as Market Lane and Sey, with an international pour-over list. This small shop at Melbourne Quarter, on Ti Tree Walk in Docklands, is its only outpost in Melbourne.

Foremost is a coffee bar that champions Indonesian coffee, one of the world's most varied origins and still underrated in Australia. The flagship sits on St Kilda Road, with a second café in Docklands, and both pour specialty Indonesian brews alongside the signature Coconut Island. Its sibling brand is Warung Coffee, a sandwich shop in South Yarra. It opened in 2024.

Penny is a takeaway window in The District at Newquay, Docklands, run by Constance Coffee, which roasts traceable specialty coffee and makes its own drinking chocolate. The coffee menu rotates, with a curated selection of teas and sourdough from a good bakery to go with it. It opens early on weekdays and closes around lunchtime, so come in the morning.
