Hillbilly has roasted coffee in Melbourne for more than 24 years, using Northern Italian roasting techniques to bring out each origin in its blends. Beans are roasted after you order rather than weeks ahead, and the Port Melbourne roastery on Graham Street also runs a small coffee snack bar.
